Ingredients
  

For the Chicken
  • 1 pound Chicken Breast Optional: use boneless thighs for more flavor

  • 1/2 cup Cornstarch Essential for texture
  • 2 Eggs Beaten well
  • 3 tablespoons Oil For pan-frying
For the Orange Sauce
  • 1/2 cup Brown Sugar Alternative: coconut sugar
  • 1/2 cup Orange Juice
  • 2 tablespoons Rice Vinegar Can swap with apple cider vinegar
  • 1 tablespoon Soy Sauce Low-sodium soy sauce can be used
  • 1 teaspoon Garlic Finely chopped
  • 1 teaspoon Red Chili Flakes Adjust based on spice preference
  • 1 teaspoon Orange Zest Ensure to zest without the bitter pith
  • 1 teaspoon Additional Cornstarch For thickening sauce
For Garnish
  • 2 tablespoons Green Onion Optional but recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a bit of oil or cooking spray.
  2. In a large mixing bowl, season the chicken breasts with salt and pepper.
  3. In a shallow dish, add cornstarch, and in another bowl, beat your eggs. Coat each piece of chicken in cornstarch, then dip into the beaten eggs.
  4. Heat 3 tablespoons of oil in a large skillet over medium-high heat and brown the chicken pieces.
  5. In a separate bowl, combine brown sugar, orange juice, rice vinegar, soy sauce, garlic, red chili flakes, and orange zest.
  6. Place the browned chicken in the greased baking dish and pour the orange sauce evenly over the chicken.
  7. Transfer the baking dish to the oven and bake for 40 to 50 minutes, stirring every 15 minutes.
  8. Once cooked through and caramelized, let it rest for a few minutes before serving, garnished with green onions.
