Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together the sour cream, red salsa, ground cumin, salt, and lime juice until smooth and creamy.
  2. Cook the corn by grilling or boiling if fresh for 5-7 minutes, or steaming if frozen. Finely chop the romaine lettuce, red bell pepper, and diced tomatoes. Thinly slice the green onions.
  3. In a large mixing bowl, combine the romaine, bell pepper, black beans, cooked corn, green onions, crushed tortilla chips, and grated cheddar cheese. Toss gently.
  4. Drizzle the dressing over the salad mixture right before serving and toss gently to coat. Serve with additional dressing on the side.
