Step-by-Step Instructions
  1. In a medium bowl, mix together the peach preserves, bourbon, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Reserve half of the marinade in a separate bowl for later use.
  2. Place the salmon filets in a shallow dish, and pour the remaining marinade over them. Cover with plastic wrap and let marinate for at least 30 minutes at room temperature.
  3. Preheat your oven to 375°F (190°C) while the salmon marinates.
  4. Heat olive oil in an oven-safe skillet over medium-high heat, then add the marinated salmon filets.
  5. Sear the salmon filets skin side up for 2-3 minutes until golden-brown, then flip to skin side down.
  6. Layer the sliced peaches around the salmon and cook for another 2-3 minutes.
  7. Pour the reserved marinade over the salmon and peaches.
  8. Transfer the skillet to the oven and bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F (63°C).
