Preparation Steps
- Preheat your oven to 350°F (175°C). Crush the graham crackers until fine crumbs and mix with melted butter. Press into an 8-inch square pan and chill for 30 minutes.
- In a mixing bowl, combine whipped cream, yogurt, and bubblegum extract. Beat until fluffy and holds stiff peaks (3-5 minutes).
- In a small saucepan, warm 1/4 cup of water, sprinkle gelatin over it and let it bloom for 1 minute. Stir until dissolved and allow to cool slightly.
- Gradually fold the dissolved gelatin into the whipped mixture until smooth and combined.
- Pour the filling over the chilled graham cracker base, smoothing the top. Cover and refrigerate for at least 2 hours until firm.
- Once chilled, cut into slices and serve with additional whipped cream or fresh fruit as garnish.
