Step-by-Step Instructions
  1. Start by shredding 16 oz. of cabbage, using a mandoline for even pieces. Next, grate 2 medium-small carrots and thinly slice 2-3 scallions. Finally, mince 2 cloves of garlic.
  2. In a large bowl, combine the prepared cabbage, carrots, scallions, and garlic. Crack in 3 large eggs, then add 4-5 tablespoons of flour, 1 teaspoon of sea salt, ½ teaspoon of black pepper, ½ teaspoon of paprika, and the optional ½ teaspoon of coriander. Toss gently to coat.
  3. Using your hands, take a heaping tablespoon of the mixture and form it into a ball, then flatten into a patty about ½ inch thick.
  4. Heat a skillet over medium-low heat and add 3-4 tablespoons of ghee or oil. Carefully place fritters in the skillet and fry for about 3 minutes on each side until golden-brown.
  5. For the baking option, preheat your oven to 420°F (215°C) and arrange fritters on a parchment-lined baking sheet. Bake for 20-23 minutes, flipping halfway through.
