Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, add the lean ground beef and chopped yellow onion. Brown for 5-7 minutes.
  3. Add the diced red bell pepper and taco seasoning mix. Cook for an additional 3 minutes.
  4. In a separate bowl, combine the biscuit mix, water, sour cream, mayonnaise, and diced green chiles. Mix until smooth.
  5. Layer half of the meat mixture in a greased 9 x 13” casserole dish.
  6. Pour half of the biscuit mixture over the meat layer. Smooth it out.
  7. Add the remaining meat mixture on top and cover with the rest of the biscuit mixture. Sprinkle cheddar cheese on top.
  8. Bake for 30-35 minutes until the cheese is bubbly and golden brown.
  9. Let the casserole cool for about 5-10 minutes before serving.
