- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, add the lean ground beef and chopped yellow onion. Brown for 5-7 minutes.
- Add the diced red bell pepper and taco seasoning mix. Cook for an additional 3 minutes.
- In a separate bowl, combine the biscuit mix, water, sour cream, mayonnaise, and diced green chiles. Mix until smooth.
- Layer half of the meat mixture in a greased 9 x 13” casserole dish.
- Pour half of the biscuit mixture over the meat layer. Smooth it out.
- Add the remaining meat mixture on top and cover with the rest of the biscuit mixture. Sprinkle cheddar cheese on top.
- Bake for 30-35 minutes until the cheese is bubbly and golden brown.
- Let the casserole cool for about 5-10 minutes before serving.
