Method
 

Preparation Steps
  1. In a mixing bowl, combine softened unsalted butter, cream cheese, vanilla extract, and powdered sugar. Blend until smooth and creamy, about 2-3 minutes.
  2. Gently fold in the whipped cream into the cream cheese mixture. Continue folding until fully combined.
  3. Prepare your assortment of fresh fruits by dicing them, and add to the creamy mixture. Fold in gently.
  4. Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes.
  5. Once chilled, spread a generous amount of cheesecake filling on a tortilla, leaving a little edge.
  6. Tightly roll the tortilla away from you and brush the outside with melted butter.
  7. Mix the cinnamon sugar in a small bowl and roll the tortilla in it until fully coated.
  8. Slice the roll into 2/3 to 3/4-inch rounds and serve immediately.
