Preparation Steps
- In a mixing bowl, combine softened unsalted butter, cream cheese, vanilla extract, and powdered sugar. Blend until smooth and creamy, about 2-3 minutes.
- Gently fold in the whipped cream into the cream cheese mixture. Continue folding until fully combined.
- Prepare your assortment of fresh fruits by dicing them, and add to the creamy mixture. Fold in gently.
- Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes.
- Once chilled, spread a generous amount of cheesecake filling on a tortilla, leaving a little edge.
- Tightly roll the tortilla away from you and brush the outside with melted butter.
- Mix the cinnamon sugar in a small bowl and roll the tortilla in it until fully coated.
- Slice the roll into 2/3 to 3/4-inch rounds and serve immediately.
