- Bring a large pot of salted water to a rolling boil. Add rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta and set aside.
- In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook the chicken for 6-7 minutes per side until golden brown and cooked through. Remove and let rest.
- In the same skillet, reduce heat to medium and melt butter. Sauté minced garlic for about 30 seconds. Add chicken broth and heavy cream, bringing to a gentle simmer.
- Gradually stir in mozzarella, Parmesan, and cheddar cheeses until melted and creamy.
- Slice the chicken and return it to the skillet along with the drained rotini. Toss to coat everything in the sauce and let simmer for 2-3 minutes.
- Remove from heat, garnish with chopped parsley, and serve hot.
