Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. Season both sides of the boneless chicken breasts with salt and pepper. Heat a skillet over medium-high heat and cook for 6-7 minutes on each side until golden brown, reaching an internal temperature of 165°F (75°C). Let it rest for a few minutes.
  3. Melt half a cup of butter in a small saucepan over low heat. Stir in minced garlic and, if desired, Italian herbs. Cook for about 2-3 minutes until fragrant.
  4. Spread a generous amount of garlic butter on each slice of garlic bread. Place a layer of cooked chicken on one slice, followed by mozzarella cheese. Top with another slice of garlic bread, pressing down gently.
  5. Place the assembled sandwiches in the baking dish and bake for 10-15 minutes until the cheese is bubbly and the garlic bread is golden brown.
