  • 2 tablespoons Olive Oil vegetable or canola oil makes a great alternative
  • 1 medium Onion, chopped shallots can be used as an alternative
  • 2 cloves Garlic, minced garlic powder works in a pinch
For the Potatoes
  • 3 medium Potatoes, peeled and diced sweet potatoes can be used for a healthier option
  • 1 teaspoon Salt kosher salt or sea salt can be used as substitutes
  • 1/2 teaspoon Black Pepper white pepper can be used instead
  • 1 teaspoon Paprika chili powder can be used for added spice
  • 1/2 teaspoon Dried Oregano fresh oregano or Italian seasoning work well
For the Creamy Topping
  • 1 cup Cheddar Cheese, shredded mozzarella or Monterey Jack can be substituted
  • 1/2 cup Beef Broth vegetable broth can be used for a lighter version
  • 1 tablespoon Fresh Parsley, chopped chives or cilantro can be used as substitutes

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 2 minutes.
  2. Add 1 pound of ground beef to the skillet and cook for 5–7 minutes until browned and no longer pink.
  3. Stir in 1 chopped medium onion and 2 minced garlic cloves, cooking for an additional 3–4 minutes until the onion is translucent.
  4. Incorporate 3 diced medium potatoes, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano into the skillet.
  5. Pour in 1/2 cup of beef broth and cover. Simmer on low heat for 20–25 minutes until the potatoes are tender.
  6. Once the potatoes are cooked, sprinkle 1 cup of shredded cheddar cheese over the top. Cover and cook for 2-3 more minutes until the cheese melts.
  7. Remove from heat and garnish with 1 tablespoon of chopped fresh parsley before serving.
