- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering, about 2 minutes.
- Add 1 pound of ground beef to the skillet and cook for 5–7 minutes until browned and no longer pink.
- Stir in 1 chopped medium onion and 2 minced garlic cloves, cooking for an additional 3–4 minutes until the onion is translucent.
- Incorporate 3 diced medium potatoes, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano into the skillet.
- Pour in 1/2 cup of beef broth and cover. Simmer on low heat for 20–25 minutes until the potatoes are tender.
- Once the potatoes are cooked, sprinkle 1 cup of shredded cheddar cheese over the top. Cover and cook for 2-3 more minutes until the cheese melts.
- Remove from heat and garnish with 1 tablespoon of chopped fresh parsley before serving.
