Preparation Steps
- Rinse strawberries under cool water, pat dry, remove leaves and stems, and chop into small pieces.
- In a mixing bowl, combine diced strawberries with Greek yogurt and vanilla extract. Stir until strawberries are coated.
- Scoop the mixture onto a parchment-lined baking sheet, spacing clusters a few inches apart.
- Freeze the baking sheet for 30 to 45 minutes until clusters are firm.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals until smooth.
- Dip each frozen cluster into the melted chocolate, letting excess chocolate drip off.
- Let the coated clusters sit at room temperature for 10 minutes to set, or freeze for an additional 5-10 minutes.
