- In a medium bowl, mix together rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir until well combined.
- If desired, gently fold in sliced bananas to enhance creaminess. Ensure even distribution.
- Divide the mixture evenly between two jars or airtight containers, filling them about three-quarters full.
- Place the sealed jars in the refrigerator and let sit overnight, or for at least 4 hours.
- Before serving, give the oats a good stir to recombine all ingredients. Top with whipped cream and shredded coconut if desired.
