  • Salt and pepper Essential for seasoning to taste.
For Garnish
  • 1 handful Fresh cilantro Substitute with parsley if preferred.

Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté until translucent, about 5 minutes.
  2. Stir in 3 minced garlic cloves and 1 tablespoon of grated fresh ginger. Cook for an additional minute until aromatic.
  3. Add 1 sliced red bell pepper, stirring to combine. Cook for 3-4 minutes until softened.
  4. Pour in 1 can of coconut milk and 4 cups of broth, stirring well. Bring to a gentle simmer.
  5. Stir in 2 tablespoons of fish sauce, 2 tablespoons of lime juice, and 1 teaspoon of sugar. Season with salt and pepper and simmer for 2 minutes.
  6. Gently add 1 pound of fish fillets to the pot. Cook for 5-7 minutes until the fish is opaque.
  7. Remove from heat and stir in chopped fresh cilantro.
  8. Ladle the soup into bowls and garnish with lime wedges.
