Method
 

Preparation Instructions
  1. Rub the rim of each glass with fresh lime juice, then dip into sea salt and allow to dry.
  2. Divide fresh mint leaves between the two salted glasses and gently press to release oils.
  3. In a mixing glass, combine coconut milk and lime juice, add ginger beer and seltzer, stir for 15 seconds, then pour into glasses over mint.
  4. For a smoother version, blend all ingredients in a blender for 30 seconds, then pour into prepared glasses.
  5. Serve immediately, add ice if desired, and garnish with a mint sprig or lime wheel.
