  • 1 pound Baby Potatoes halved
For the Cod
  • 1 pound Cod Fillets light and flaky
For the Sauce
  • 2 tablespoons Olive Oil for pan-searing
  • 2 tablespoons Butter optional for lighter version
  • 3 cloves Minced Garlic fresh or powdered
  • 1 cup Heavy Cream or half-and-half for lighter touch
  • 1 cup Chicken Broth gluten-free if necessary
  • 2 tablespoons Fresh Rosemary chopped
  • 2 tablespoons Lemon Juice or vinegar
For Seasoning

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add halved baby potatoes and cook for about 15 minutes until fork-tender. Drain and set aside.
  2. Season cod fillets with salt and pepper. Heat a skillet over medium heat, add olive oil, and cook cod for 3-4 minutes on each side until flaky and golden. Transfer to a plate.
  3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in heavy cream and chicken broth, stirring continually. Add rosemary and lemon juice, and let simmer for 4-5 minutes.
  4. Fold cooked baby potatoes into the sauce to coat. Nestle cod fillets back into the sauce to warm for 2 minutes.
  5. Transfer cod and potatoes to a serving plate and spoon extra sauce on top. Garnish with freshly chopped parsley if desired.
