Cooking Steps
- Bring a large pot of salted water to a boil. Add halved baby potatoes and cook for about 15 minutes until fork-tender. Drain and set aside.
- Season cod fillets with salt and pepper. Heat a skillet over medium heat, add olive oil, and cook cod for 3-4 minutes on each side until flaky and golden. Transfer to a plate.
- In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Pour in heavy cream and chicken broth, stirring continually. Add rosemary and lemon juice, and let simmer for 4-5 minutes.
- Fold cooked baby potatoes into the sauce to coat. Nestle cod fillets back into the sauce to warm for 2 minutes.
- Transfer cod and potatoes to a serving plate and spoon extra sauce on top. Garnish with freshly chopped parsley if desired.
