- Preheat your oven to 375°F (190°C). Prepare a 9x9-inch baking dish by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix until just combined.
- Transfer the mixture into your prepared baking dish and press it down firmly. Bake uncovered for 20–25 minutes until slightly firm and browning.
- Warm your leftover mashed potatoes and mix with sour cream and butter until creamy. Season to taste with salt and pepper.
- Spread the creamy mashed potatoes over the baked meatloaf evenly.
- Sprinkle shredded cheddar cheese over the mashed potatoes and return to the oven for 10–15 minutes until cheese is melted and bubbly.
- Let the dish cool for 5–10 minutes before slicing. Serve hot and garnish with fresh parsley.
