For the Meatloaf
  • 1 lb Ground Beef 80/20 or 85/15 for best flavor
  • 1 cup Plain Breadcrumbs Gluten-free if necessary
  • 1/2 cup Milk Unsweetened almond milk for dairy-free
  • 1 large Egg Flaxseed egg for vegan option
  • 1/2 cup Ketchup BBQ sauce for a smoky flavor
  • 1 tsp Garlic Powder Fresh minced garlic can be used
  • 1 tsp Onion Powder Fresh diced onions can be substituted

For the Mashed Potatoes
  • 4 large Yukon Gold or Russet Potatoes Best texture for mashing
  • 1/2 cup Sour Cream Greek yogurt as a substitute
  • 1/4 cup Butter Olive oil or vegan butter can be used
For the Topping
  • 1 cup Shredded Cheddar Cheese Experiment with different cheeses
  • to taste Fresh Parsley Optional garnish

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Prepare a 9x9-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Transfer the mixture into your prepared baking dish and press it down firmly. Bake uncovered for 20–25 minutes until slightly firm and browning.
  4. Warm your leftover mashed potatoes and mix with sour cream and butter until creamy. Season to taste with salt and pepper.
  5. Spread the creamy mashed potatoes over the baked meatloaf evenly.
  6. Sprinkle shredded cheddar cheese over the mashed potatoes and return to the oven for 10–15 minutes until cheese is melted and bubbly.
  7. Let the dish cool for 5–10 minutes before slicing. Serve hot and garnish with fresh parsley.
