Step-by-Step Instructions for Japanese Coffee Jelly
  1. Soak the gelatin. Place 2 tablespoons of cold water in a small bowl, then add 1 tablespoon of gelatin powder. Let it sit for 5–10 minutes until it blooms.
  2. Prepare the coffee mixture. Heat 1 cup of water to boiling, whisk in 2 tablespoons of instant coffee and 3 tablespoons of sugar until dissolved.
  3. Combine the gelatin and coffee. Return the mixture to low heat, add bloomed gelatin, whisk for 2–3 minutes until fully dissolved.
  4. Pour and chill. Pour the warm mixture into cups or a mold, cover, and refrigerate for 3–4 hours until set.
