Step-by-Step Instructions for Japanese Coffee Jelly
- Soak the gelatin. Place 2 tablespoons of cold water in a small bowl, then add 1 tablespoon of gelatin powder. Let it sit for 5–10 minutes until it blooms.
- Prepare the coffee mixture. Heat 1 cup of water to boiling, whisk in 2 tablespoons of instant coffee and 3 tablespoons of sugar until dissolved.
- Combine the gelatin and coffee. Return the mixture to low heat, add bloomed gelatin, whisk for 2–3 minutes until fully dissolved.
- Pour and chill. Pour the warm mixture into cups or a mold, cover, and refrigerate for 3–4 hours until set.
- Serve with toppings. Remove from fridge and add whipped cream or other toppings before serving.
