Ingredients
  

Pasta
  • 8 oz pasta any type including whole wheat or gluten-free
Chicken
  • 2 cups diced chicken breast can use frozen chicken
Sauce
  • 4 tbsp butter can swap for olive oil or vegan butter
  • 3 cloves garlic minced; garlic powder can be used
  • 1 medium onion diced; red or yellow onion are both options
  • 1 cup heavy cream use coconut milk or cashew cream for dairy-free
  • 1 cup chicken broth vegetable broth can be used
  • 1/2 cup Parmesan cheese nutritional yeast can be used for vegan
  • 1 tbsp Italian seasoning
  • 1/2 tsp red pepper flakes omit for milder dish
  • to taste salt
  • to taste pepper
Garnish
  • 2 tbsp fresh parsley chopped; fresh basil is an alternative

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, drain remaining water, and set aside pasta.
  2. In a skillet, melt 2 tablespoons of butter over medium-high heat. Season chicken with salt and pepper, add to skillet, and cook for 6-8 minutes until golden and cooked through. Remove chicken and keep warm.
  3. In the same skillet, melt the remaining 2 tablespoons of butter, add garlic and onion, sauté for 3-4 minutes until onion is translucent.
  4. Stir in heavy cream and chicken broth, mix in Italian seasoning, red pepper flakes, and salt and pepper. Simmer for around 5 minutes until sauce thickens.
  5. Return chicken and pasta to skillet, tossing to combine. Add reserved pasta water gradually until desired consistency is reached. Cook for an additional 2 minutes.
  6. Plate the pasta, sprinkle Parmesan cheese and parsley on top, and serve warm.

Notes

For smooth sauce consistency, gradually add reserved pasta water while stirring. Ensure chicken is cooked thoroughly before serving.
