Step-by-Step Instructions
  1. Season chicken thighs with salt and pepper on both sides and set aside.
  2. Heat oil or butter in a skillet over medium-high heat and brown chicken thighs skin-side down for 5-7 minutes.
  3. Flip chicken, cook for an additional 3-4 minutes, then set aside.
  4. In the same skillet, sauté sliced onions for about 5 minutes until translucent.
  5. Add minced garlic, cook for another 30 seconds, then add sliced apples and herbs, stirring for 2-3 minutes.
  6. Pour in apple cider and chicken broth, bring to a gentle simmer.
  7. Nestle chicken back into the skillet, cover, and simmer on low for 25-30 minutes.
  8. Stir in heavy cream and Dijon mustard, simmer for 3-5 minutes until slightly thickened.
  9. Return chicken to skillet to warm through, then serve with sauce and garnished with fresh herbs.
