  • 1 teaspoon Oregano Mexican oregano preferred
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Cumin Optional for extra flavor
For the Soup Base
  • 8 ounces Fideo noodles Substitute with cut spaghetti if needed
  • 3 tablespoons Olive oil Can use vegetable oil
  • 4 cups Broth Chicken or vegetable, for vegan version use vegetable broth
For Garnishing
  • 1/4 cup Cilantro Freshly chopped, omit if less desirable
  • 2 units Lime Wedges for serving

Method
 

Step-by-Step Instructions
  1. Blend together tomatoes, olive oil, garlic, oregano, salt, and cumin until smooth. Set aside.
  2. Heat olive oil in a pot. Add fideo noodles and toast for 3-5 minutes until golden brown.
  3. Pour the tomato mixture into the pot, frying with noodles for 1-2 minutes. Add broth, bring to boil, then reduce heat and simmer for 5 minutes.
  4. Remove from heat and stir in cilantro. Serve in bowls with lime wedges on the side.
