Step-by-Step Instructions

  2. Roll out the puff pastry to about ¼ inch thickness and score a ½-inch border around the edges.
  3. Cook the pancetta in a medium skillet until golden brown and crispy, about 5–7 minutes.
  4. Combine fresh cranberries and a bit of sugar in a saucepan over medium heat, cooking for 5–7 minutes until thickened.
  5. Layer Brie cheese, cranberry mixture, pancetta, and thyme on the rolled pastry.
  6. Brush edges with beaten egg and bake for 20–25 minutes until golden brown.
  7. Cool for 5 minutes and drizzle with honey or balsamic glaze before serving.
