Step-by-Step Instructions
  1. Preheat a large skillet or griddle over medium heat to around 350°F (175°C).
  2. Spread a thin layer of softened unsalted butter on one side of each slice of bread.
  3. Flip two of the bread slices over and spread about 1 tablespoon of apple butter evenly onto each slice.
  4. Layer slices of Brie cheese over the apple butter, and add thin apple slices and fresh thyme if using.
  5. Take the remaining slices of bread and place them on top, ensuring the buttered sides are facing outward.
  6. Cook the assembled sandwiches in the preheated skillet for 3-4 minutes on one side until golden brown.
  7. Flip the sandwiches carefully and cook until the other side is golden brown and the cheese is melted.
  8. Remove from the skillet, let them rest for a minute, then slice in half and serve warm.
