- Preheat a large skillet or griddle over medium heat to around 350°F (175°C).
- Spread a thin layer of softened unsalted butter on one side of each slice of bread.
- Flip two of the bread slices over and spread about 1 tablespoon of apple butter evenly onto each slice.
- Layer slices of Brie cheese over the apple butter, and add thin apple slices and fresh thyme if using.
- Take the remaining slices of bread and place them on top, ensuring the buttered sides are facing outward.
- Cook the assembled sandwiches in the preheated skillet for 3-4 minutes on one side until golden brown.
- Flip the sandwiches carefully and cook until the other side is golden brown and the cheese is melted.
- Remove from the skillet, let them rest for a minute, then slice in half and serve warm.
