Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve or quarter the baby potatoes, then pat dry.
  3. Combine the halved potatoes with cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and salt in a large baking dish.
  4. Place the block of feta cheese in the center of the dish and drizzle with more olive oil.
  5. Bake for 35-40 minutes, stirring halfway through.
  6. Stir the melted feta into the potato and tomato mixture.
  7. Serve warm or allow to cool for meal prep.
