  7. Pour the strained custard into ramekins about three-quarters full.
  8. Create a water bath by placing the ramekins in a baking dish and adding hot water.
  9. Bake for 35–40 minutes until set with a slight jiggle.
  10. Allow to cool to room temperature, then refrigerate for at least 2 hours.
  11. Serve chilled with a sprinkle of nutmeg or your favorite garnish.
