  1. In a large mixing bowl, combine the ground beef or pork with breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently and roll into 1-inch balls.
  2. Heat olive oil in a large pot over medium heat. Sear meatballs in batches for 2-3 minutes until golden brown; transfer to a plate.
  3. In the same pot, add onion and celery. Sauté for 3-4 minutes until softened, then add minced garlic for another minute.
