Step-by-Step Instructions for Smoked Gouda Broccoli Soup
  1. In a large saucepan over medium heat, melt 2 tablespoons of unsalted butter until it bubbles gently. Add 1 medium diced onion and stir, cooking for about 4 minutes until the onions are browned and translucent.
  2. Stir in 2 minced garlic cloves and cook for an additional 30 seconds, stirring constantly.
  3. Sprinkle in ¼ cup of all-purpose flour, stirring well to form a paste. Cook for about 1 minute while continuously stirring.
  4. Gradually whisk in 16 ounces of broth (vegetable or chicken) and 16 ounces of whole milk. Add ½ teaspoon of salt, ½ teaspoon of paprika, and ¼ teaspoon of pepper.
  5. Add 1 large head of chopped broccoli and 1 grated carrot to the pot. Stir everything together and bring the mixture to a simmer.
  6. Once the vegetables are tender, remove the saucepan from heat. Gradually add 8 ounces of freshly grated smoked gouda, stirring continuously until fully melted and creamy.
