Step-by-Step Instructions
  1. Cook pasta in salted boiling water until al dente, about 8-10 minutes. Drain and toss with olive oil.
  2. Prepare the dressing by mixing softened cream cheese, lime juice, salt, and pepper until smooth.
  3. Grill or roast corn until charred, around 10-15 minutes, then cut off kernels.
  4. In the dressing bowl, combine pasta, corn, red onion, bell pepper, and cilantro. Toss to coat.
  5. Melt butter in a skillet, add cayenne and chili powder. Pour over the salad and mix.
  6. Let salad sit for 10-15 minutes before serving. Top with lime mayo if desired.
