  • 1/2 medium Red Onion Diced
  • 1 medium Bell Pepper Any color, diced
  • 1/4 cup Cilantro Chopped, substitute parsley if preferred
  • 1/2 teaspoon Cayenne Pepper Adjust to taste
  • 1 teaspoon Chili Powder Adds depth to the flavor
  • 2 tablespoons Olive Oil For tossing pasta
For the Topping
  • 1 medium Avocado Diced, added just before serving

  3. Grill fresh corn for 8-10 minutes or sauté frozen corn until browned, then let cool and slice off the kernels.
  4. In the bowl with the dressing, add the cooled pasta, corn, red onion, bell pepper, and cilantro. Toss gently.
  5. Fold in diced avocado just before serving and squeeze extra lime juice to keep it vibrant.
  6. Let the salad sit at room temperature for 15-20 minutes before serving for flavors to meld.
