- Preheat your oven to 430°F (220°C) and line a baking sheet with parchment paper.
- Combine diced sweet potatoes with minced garlic, drizzle with olive oil, and season with salt and pepper. Spread on the baking sheet and roast for 20-25 minutes.
- While roasting, boil salted water in a large pot and cook pasta according to package instructions. Reserve 2/3 cup of pasta water before draining.
- In a skillet, heat olive oil and butter, then fry sage leaves for 1-2 minutes until crispy. Transfer to a paper towel to drain.
- Add roasted sweet potatoes to the skillet. Mash some for creaminess, then stir in pasta, heavy cream, and goat cheese.
- Mix in reserved pasta water gradually until combined and creamy. Adjust seasoning as necessary before serving.
