Method
 

Cooking Instructions
  1. Preheat your oven to 430°F (220°C) and line a baking sheet with parchment paper.
  2. Combine diced sweet potatoes with minced garlic, drizzle with olive oil, and season with salt and pepper. Spread on the baking sheet and roast for 20-25 minutes.
  3. While roasting, boil salted water in a large pot and cook pasta according to package instructions. Reserve 2/3 cup of pasta water before draining.
  4. In a skillet, heat olive oil and butter, then fry sage leaves for 1-2 minutes until crispy. Transfer to a paper towel to drain.
  5. Add roasted sweet potatoes to the skillet. Mash some for creaminess, then stir in pasta, heavy cream, and goat cheese.
  6. Mix in reserved pasta water gradually until combined and creamy. Adjust seasoning as necessary before serving.
