Method
 

Preparation Steps
  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté chopped onion, leeks, diced carrots, and minced garlic for about 5-7 minutes until softened.
  3. Add broccoli florets and frozen peas to the skillet, pour in water, cover, and steam for another 5-7 minutes.
  4. Prepare the béchamel sauce and mix it with the sautéed vegetables.
  5. Transfer the creamy vegetable mixture into a greased baking dish.
  6. Unroll the puff pastry over the filling, trimming excess pastry as needed.
  7. Crimp the edges of the pastry and cut slits on top to vent.
  8. Brush the crust with egg wash or a vegan substitute.
  9. Bake in the oven for 20-30 minutes until the crust is golden brown.
  10. Let the pie rest for 5-10 minutes before serving.
