- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Wash and dry the baby potatoes, then cut them in half.
- Chop the bacon into small pieces.
- In a bowl, combine the halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until well-coated.
- Spread the seasoned potatoes on the prepared baking sheet.
- Sprinkle the chopped bacon over the potatoes.
- Roast for 30-35 minutes, flipping halfway through.
- In the last 5 minutes, drizzle honey over the potatoes and bacon.
- Remove from oven, garnish with fresh parsley, and serve warm.
