  • 1 lb Ground Turkey Aim for 85/15 or 93/7 fat content
  • 1 can Black Beans Drain but don't rinse
  • 1 can Green Chiles Opt for canned varieties
  • 2 tbsp Taco Seasoning Homemade or store-bought
For the Wraps
  • 8 count Flour Tortillas Fajita-sized (6-inch)
  • 1 cup Monterey Jack Cheese Substitute with Pepper Jack or Cheddar if desired
For the Avocado Sauce
  • 1 count Avocado Select ripe ones
  • 1/2 cup Sour Cream Greek yogurt is a lighter substitute
  • 1/4 cup Cilantro Optional
  • 2 tbsp Lime Juice Fresh is best

Method
 

Step-by-Step Instructions
  1. Blend half an avocado with sour cream, lime juice, cilantro, salt, and a splash of water in a food processor until smooth. Transfer to a bowl and refrigerate.
  2. In a large skillet, heat olive oil over medium heat. Add onions and sauté until softened. Incorporate ground turkey and cook until browned, about 5-7 minutes. Stir in taco seasoning.
  3. Fold in the drained black beans and green chiles. Simmer on low heat for about 5 minutes to thicken.
  4. Preheat oven to 425°F. Lay out tortillas on a baking sheet, sprinkle cheese and turkey mixture, fold and brush with olive oil.
  5. Bake until golden brown and crispy, about 10-12 minutes. Let cool slightly before serving with avocado sauce.
