- Blend half an avocado with sour cream, lime juice, cilantro, salt, and a splash of water in a food processor until smooth. Transfer to a bowl and refrigerate.
- In a large skillet, heat olive oil over medium heat. Add onions and sauté until softened. Incorporate ground turkey and cook until browned, about 5-7 minutes. Stir in taco seasoning.
- Fold in the drained black beans and green chiles. Simmer on low heat for about 5 minutes to thicken.
- Preheat oven to 425°F. Lay out tortillas on a baking sheet, sprinkle cheese and turkey mixture, fold and brush with olive oil.
- Bake until golden brown and crispy, about 10-12 minutes. Let cool slightly before serving with avocado sauce.
