Preparation Steps
  1. Start by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with oil.
  2. In a mixing bowl, combine the cooked shredded chicken, cream cheese, shredded cheddar cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper. Blend until evenly mixed.
  3. Warm the tortillas in the microwave for about 20 seconds to prevent cracks while rolling.
  4. Place 2-3 tablespoons of the chicken filling onto one side of each warm tortilla. Roll tightly, tucking in the sides as you go.
  5. Lay the rolled taquitos seam-side down on the prepared baking sheet, spaced apart for even cooking.
  6. Lightly coat each taquito with cooking oil or spray to enhance crispiness.
  7. Bake your taquitos in the oven for 15-20 minutes, until golden and crispy. Broil for additional crunch, watching closely.
  8. Remove from the oven and let cool slightly before serving. Pair with toppings like sour cream or guacamole.
