Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine crumbled feta cheese, chopped dill, mint, lemon zest, and black pepper in a bowl.
- Layer a sheet of phyllo pastry, brush with olive oil, and layer another sheet on top.
- Cut the layered phyllo sheets into four equal strips lengthwise.
- Fill one end of each phyllo strip with 1 tablespoon of the feta mixture and fold the edges.
- Roll the phyllo strip tightly from the filling end to secure.
- Arrange them seam-side down on the prepared baking sheet and brush the tops with olive oil.
- Bake for 18-20 minutes until golden brown and crispy.
- While baking, heat honey with chili flakes and lemon juice until runny.
- Drizzle the warm chili honey over the rolls before serving.
