  • 1 pound Gnocchi can be store-bought or homemade
  • 2 tablespoons Olive Oil or avocado oil
For the Filling
  • 4 cups Fresh Spinach can swap with kale or Swiss chard
  • 1 cup Feta Cheese can use goat cheese or ricotta
  • 2 cloves Garlic minced, or garlic powder as alternative
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes optional

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil, add gnocchi, cook until they float (about 2-3 minutes). Drain with a slotted spoon.
  2. In a frying pan, heat olive oil over medium-high until shimmering.
  3. Add boiled gnocchi in a single layer, cook undisturbed for about 2-3 minutes until golden brown, then stir and cook for another 2-3 minutes.
  4. Reduce heat to medium, add minced garlic, sauté for about 1 minute until fragrant.
  5. Add fresh spinach to the pan, stir and cook for about 2-3 minutes until wilted.
  6. Season with salt, black pepper, and red pepper flakes. Remove from heat and fold in crumbled feta cheese.
