Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini and a sprinkle of salt. Let it rest for about 10 minutes to draw out moisture.
  3. Squeeze the zucchini using a kitchen towel to eliminate excess liquid and set it aside.
  4. Add breadcrumbs, feta cheese, Parmesan, egg, minced garlic, dried oregano, black pepper, and optional red pepper flakes to the drained zucchini. Mix well.
  5. Shape small portions of the mixture into 1-2 inch tots and place them on the prepared baking sheet.
  6. Spray the tops lightly with cooking spray or drizzle with olive oil to help achieve crispiness.
  7. Bake for 20-25 minutes, flipping halfway through until golden brown and crispy.
  8. Allow to cool for a few minutes before serving with tzatziki sauce or your favorite dip.
