- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated zucchini and a sprinkle of salt. Let it rest for about 10 minutes to draw out moisture.
- Squeeze the zucchini using a kitchen towel to eliminate excess liquid and set it aside.
- Add breadcrumbs, feta cheese, Parmesan, egg, minced garlic, dried oregano, black pepper, and optional red pepper flakes to the drained zucchini. Mix well.
- Shape small portions of the mixture into 1-2 inch tots and place them on the prepared baking sheet.
- Spray the tops lightly with cooking spray or drizzle with olive oil to help achieve crispiness.
- Bake for 20-25 minutes, flipping halfway through until golden brown and crispy.
- Allow to cool for a few minutes before serving with tzatziki sauce or your favorite dip.
