Step-by-Step Instructions
  1. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  2. Mix the zucchini with eggs, oat flour, optional parmesan, Greek yogurt, garlic, sea salt, black pepper, oregano, and parsley until combined.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Form fritters using 2 tablespoons of batter and place them in the skillet, leaving space between them.
  5. Cook for 3-4 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
  6. Remove from skillet, place on paper towel to absorb excess oil, and serve warm.
