For the Patties
  • 1 can Chickpeas drained and rinsed
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Cilantro chopped (optional)
  • 1 lemon Lemon Zest freshly grated
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika adjust for spice level
  • 1/2 teaspoon Salt adjust to taste
  • 1/4 teaspoon Pepper adjust to taste
  • 1 cup Breadcrumbs use gluten-free if needed
  • 1 large Egg or 1 flax egg for vegan option
For the Yogurt Sauce
  • 1 cup Plain Yogurt Greek recommended
  • 1 clove Garlic minced
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1/4 teaspoon Salt adjust to taste
  • Fresh Dill or Mint optional

Method
 

Step-by-Step Instructions
  1. Begin by draining and rinsing chickpeas. Mash them in a large bowl until mostly smooth, leaving some texture.
  2. Finely chop onion, mince garlic, and add to the chickpeas. Incorporate parsley, cilantro, lemon zest and juice, cumin, paprika, salt, and pepper. Fold in breadcrumbs and beaten egg (or flax egg).
  3. Shape the mixture into small patties, about ½ inch thick. Chill in the fridge for 30 minutes.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  5. In a small bowl, whisk together yogurt, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.
  6. Serve the patties warm with yogurt sauce and enjoy!

Notes

Chill patties before cooking for best results. They can also be baked for a healthier option at 400°F for about 20 minutes.
