- Begin by draining and rinsing chickpeas. Mash them in a large bowl until mostly smooth, leaving some texture.
- Finely chop onion, mince garlic, and add to the chickpeas. Incorporate parsley, cilantro, lemon zest and juice, cumin, paprika, salt, and pepper. Fold in breadcrumbs and beaten egg (or flax egg).
- Shape the mixture into small patties, about ½ inch thick. Chill in the fridge for 30 minutes.
- Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
- In a small bowl, whisk together yogurt, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.
- Serve the patties warm with yogurt sauce and enjoy!
