  • 8 pieces Corn Tortillas Brush with oil for crispiness.
  • 1 whole Store-bought Rotisserie Chicken Warm with taco seasoning.
For the Filling
  • 1 packet Taco Seasoning Add to chicken mixture.
  • 1 can Canned Black Beans Rinse and drain before use.
  • 1 cup Corn Can be canned or frozen.
For the Toppings
  • 1 cup Shredded Cheese Use cheddar or Mexican blend.
  • 1/2 cup Fresh Cilantro Garnish for freshness.
  • 1 medium Diced Tomatoes Brightens up the dish.
  • 1 whole Lime Fresh juice for zest.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and gather your baking sheet and corn tortillas.
  2. Brush both sides of the corn tortillas with oil and lay them flat on the baking sheet.
  3. Bake the tortillas for about 10 minutes, flipping them halfway through for even crisping.
  4. In a medium saucepan, combine the shredded rotisserie chicken with taco seasoning, black beans, and corn. Heat for about 5 minutes.
  5. Top each crispy tortilla with about ½ cup of the chicken mixture and sprinkle with ¼ cup of shredded cheese.
  6. Return the assembled tostadas to the oven for 5 minutes or until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro and diced tomatoes before serving warm.
