  • 2 tbsp Honey Use maple syrup for a vegan option.
  • 1 tsp Chili Flakes Adjust based on heat preference.
  • 1 tbsp Lemon Juice Adds tangy acidity to the chili honey.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, crumble the feta cheese and mix in dill, mint, lemon zest, and a pinch of black pepper.
  3. Layer two sheets of phyllo pastry, brushing the top layer lightly with olive oil. Cut into four strips.
  4. Place approximately 1 tablespoon of the feta filling at one end of each strip, fold the sides in, and roll tightly.
  5. Arrange the filled rolls seam-side down on the prepared baking sheet and brush tops with olive oil.
  6. Bake for 18–20 minutes until golden brown and crispy.
  7. While baking, warm honey in a saucepan and mix with chili flakes and a splash of lemon juice.
  8. Let the rolls cool slightly, then drizzle with the chili honey before serving.
