Preparation Steps
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, crumble the feta cheese and mix in dill, mint, lemon zest, and a pinch of black pepper.
- Layer two sheets of phyllo pastry, brushing the top layer lightly with olive oil. Cut into four strips.
- Place approximately 1 tablespoon of the feta filling at one end of each strip, fold the sides in, and roll tightly.
- Arrange the filled rolls seam-side down on the prepared baking sheet and brush tops with olive oil.
- Bake for 18–20 minutes until golden brown and crispy.
- While baking, warm honey in a saucepan and mix with chili flakes and a splash of lemon juice.
- Let the rolls cool slightly, then drizzle with the chili honey before serving.
