  • 3 medium Sweet Potatoes peeled and cut into 1-inch cubes
  • 4 tablespoons Unsalted Butter can substitute with salted butter
  • 1 cup Grated Parmesan Cheese or vegan cheese for a plant-based version
Herb Mix
  • 1 tablespoon Fresh Parsley chopped
  • 1 teaspoon Fresh Rosemary chopped
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Black Pepper

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel the sweet potatoes and cut them into uniform 1-inch cubes.
  3. In a small saucepan, melt the unsalted butter over low heat and stir in the grated Parmesan and herbs.
  4. Coat the sweet potato cubes with the herb butter mixture.
  5. Spread the sweet potato cubes in a single layer on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, flipping halfway through.
  7. Let them cool slightly before serving.
