  • 1 cup Carrots Grated.
  • 1 cup All-Purpose Flour Can substitute with whole-wheat or gluten-free flour.
  • 2 large Eggs Can substitute with flax eggs for vegan option.
  • 1 medium Onion Finely chopped.
  • 1/4 cup Fresh Parsley Chopped, can replace with cilantro or dill.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Olive Oil For frying.

Method
 

Cooking Instructions
  1. Grate the zucchini and carrots, then squeeze out moisture with a towel.
  2. Combine grated vegetables with flour, eggs, onion, parsley, salt, and pepper in a bowl.
  3. Heat olive oil in a skillet over medium heat until shimmering.
  4. Spoon 2-3 tablespoons of batter into the skillet for each fritter; flatten gently.
  5. Cook for 3-4 minutes until golden brown, flip, and cook the other side for 3-4 minutes.
  6. Remove fritters and drain on paper towels before serving.
