Cooking Steps
  1. Brown 1 pound of ground beef in a large skillet over medium-high heat for about 6-8 minutes until fully cooked. Drain excess grease and transfer to the crockpot.
  2. Add 1 diced onion, 1 diced red bell pepper, 28 ounces of crushed tomatoes, 14 ounces of diced tomatoes, 3 cloves of minced garlic, and 2 tablespoons of Italian seasoning to the crockpot. Stir well.
  3. Pour in 4 cups of beef broth and stir to combine, ensuring all ingredients are submerged.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Break 8 ounces of lasagna noodles into bite-sized pieces and stir into the soup, cooking on high for an additional 30-45 minutes.
  6. Serve hot with a dollop of ricotta and a sprinkle of shredded mozzarella on top.
