  • 2 medium cucumbers Persian or English for best crunch
  • 1 small red onion can substitute with green onion
  • 1 bunch fresh dill essential for flavor
For the Dressing
  • 1 cup Greek yogurt full-fat preferred
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup lemon juice or apple cider vinegar
  • 1 clove garlic finely grated
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a small mixing bowl, combine Greek yogurt, olive oil, lemon juice, grated garlic, salt, and pepper. Whisk until smooth, about 2 minutes.
  2. Slice cucumbers in half lengthwise, then into thin half-moons. Finely slice red onion.
  3. In a large bowl, combine sliced cucumbers, red onion, and chopped dill. Toss gently.
  4. Pour dressing over the cucumber and dill mixture. Fold gently to combine.
  5. Serve immediately or chill for 30 minutes before serving.
