For the Mousse
  • 1 block Silken Tofu Use firm silken tofu for best results.
  • 1/2 cup Smooth Peanut Butter Feel free to substitute with any nut or seed butter.
  • 1/4 cup Agave Syrup You can use maple syrup or powdered sugar as alternatives.
  • 1 teaspoon Vanilla Paste/Extract Opt for pure vanilla extract for better flavor.
  • 1 pinch Salt Just a pinch will enhance the mousse.
For the Ganache
  • 1 cup Dark Chocolate Chips (70%) Broken chocolate bars work as a substitute.
  • 1/2 cup Full Fat Coconut Milk Use the thick, creamy part from the top of the can.

Method
 

Mousse Preparation
  1. Drain the silken tofu and add it to a blender with smooth peanut butter, agave syrup, vanilla extract, and a pinch of salt. Blend on high for about 2-3 minutes until smooth and creamy.
  2. Spoon the mousse mixture into individual ramekins or jars. Cover with plastic wrap or lids and chill in the refrigerator for at least 30 minutes.
Ganache Preparation
  1. Combine dark chocolate chips with the thick part of chilled coconut milk in a microwave-safe bowl. Microwave in 20-second increments, stirring until melted and silky smooth.
Assembly
  1. Pour the ganache over each mousse ramekin, ensuring they are fully covered. Return to the fridge for at least 1 hour.
Serve
  1. Serve the mousse chilled, perhaps garnished with fresh fruit or a sprinkle of nuts.
