Preparation Steps
  1. Preheat your oven to 325°F (163°C). Prepare a springform pan by greasing it.
  2. In a bowl, combine graham cracker crumbs and sugar. Mix in melted butter until well-coated. Press into the pan and bake for 10 to 12 minutes until golden.
  3. After cooling, reduce oven temperature to 275°F (135°C) and prepare cheesecake filling ingredients.
  4. Beat cream cheese until smooth, then add Greek yogurt, sugar, vanilla, and eggs one at a time, mixing until combined.
  5. Pour the cheesecake batter into the cooled crust, smoothing the top with a spatula.
  6. In a bowl, mix apples with sugar and cinnamon, then layer them over the cheesecake batter.
  7. Combine flour, oats, brown sugar, and cinnamon. Stir in melted butter until crumbly, then sprinkle over the apples.
  8. Bake for 1.5 to 2 hours until the center reaches 150°F (65°C). The edges should be set, but the center can be jiggly.
  9. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.
  10. Cool completely at room temperature, then refrigerate for at least 8 hours before serving. Drizzle with caramel sauce before serving.
