For the Pasta
  • 8 oz pasta short shapes preferred
For Garnish
  • 1/4 cup fresh basil or parsley
  • 1/4 cup grated Parmesan cheese optional

Step-By-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Combine halved cherry tomatoes, sliced zucchini, chopped onion, minced garlic, and olive oil in a baking dish. Season with garlic powder, red pepper flakes, salt, and black pepper.
  3. Make a well in the center of the vegetable mixture and place a block of feta cheese. Season with a pinch of salt and pepper.
  4. Transfer the baking dish into the preheated oven and bake for about 30 minutes.
  5. Increase the oven temperature to 450°F (230°C) and continue baking for an additional 10 minutes.
  6. Boil salted water and cook chosen pasta according to package instructions. Reserve ½ cup of pasta water before draining.
  7. Remove the dish from the oven and mash the feta into the roasted vegetables until creamy.
  8. Add the drained pasta into the baking dish and toss until well combined, adding reserved pasta water as necessary.
  9. Garnish with fresh basil and grated Parmesan cheese if desired, then serve immediately.
