- In a blender, combine low-fat cottage cheese with enchilada sauce. Blend on medium speed until smooth and creamy, about 30 seconds.
- In a large mixing bowl, fold together the blended cottage cheese mixture and shredded rotisserie chicken. Sprinkle in taco seasoning and mix until well-coated.
- Stir in diced red bell pepper, canned corn, and black beans.
- Divide the mixture into two microwave-safe bowls. Sprinkle shredded cheese on top and microwave on high for 1-2 minutes.
- Remove from microwave and top each bowl with chopped cilantro and avocado slices. Optionally, add Greek yogurt or sour cream.
