Steps
  1. In a mixing bowl, combine 1 cup of cottage cheese, 1 cup of all-purpose flour, 2 eggs, ½ cup of milk, 1 teaspoon of baking powder, a pinch of salt, and 1 teaspoon of vanilla extract. Mix until just combined.
  2. Place your non-stick skillet or griddle over medium heat and let it warm up for about 5 minutes. Lightly grease with butter or oil.
  3. Spoon ¼ cup of batter onto the griddle for each pancake. Cook for about 3-4 minutes until bubbles form. Flip and cook for another 2-3 minutes until golden.
  4. Transfer pancakes to a serving plate and keep warm. Repeat with remaining batter.
