  1. Grate the zucchini and carrot using a kitchen grater, aiming for fine shreds. Squeeze out excess moisture to avoid soggy patties.
  2. In a large mixing bowl, combine the cooked quinoa, grated zucchini, grated carrot, and lightly mashed chickpeas. Add in the chopped bell pepper and sliced green onions, mixing gently.
  3. Sprinkle in the breadcrumbs, crack in the egg (or prepared flax egg), and pour in the soy sauce with garlic powder, onion powder, ground cumin, smoked paprika, and salt and pepper. Mix well.
